Pulcina is the result of a long search: illycaffè and Alessi wanted to find out how the shape of the espresso pot could be optimized to improve the organoleptic properties of espresso and bring them out more fully. And so they analyzed what happens inside an espresso pot. As a result, Illy was able to determine the ideal shape of the boiler—the lower part of the pot where the water boils—for perfect espresso.
